"Probably the most dramatic reduction of morbidity and mortality by dietary intervention occurred in the fortification of maize in a Guatemalan village in the early seventies with 3½ years of fortification. The morbidity rate dropped from 132/1000 to 44/1000 and persisted even in deliveries of infants <2500 g in birth weight. Further the rate in siblings to age five dropped from 29/1000 to 10/1000 with no deaths in siblings over two years of age. Morbidity from upper respiratory infection and diarrhea dropped from 10.5 days to 0.6 days as age in months was recorded. This was accomplished with a supplement of 5% soy flour, thiamine, riboflavin, niacin, vitamin A and ferric-orthophosphate (10% soy flour, thiamine, riboflavin, niacin, vitamin A and ferric-orthophosphate (10% bioavailable)." Below are published, unpublished, and/or underpublished works from Rev. Dr. Lachance's files. They were scanned, titled, and loaded individually and are somewhat in alphabetical order. Recently recovered files, photos, audio, and video will be added at the bottom and not be in ABC order. We include work co-created by Rev. Dr. Lachance and his colleagues and treasured students; we hope to honor them as well as the groundbreaking work done by Rev. Dr. Paul A. Lachance at Wright-Patterson Air Force Base Aero Medical Laboratories (feeding U2 pilots and Mercury astronauts), at NASA (Gemini and early Apollo -Houston), and at Rutgers University, Cook College (New Brunswick, NJ for over 40 years). Special honor to his students: At Rutgers, Dr. Lachance was a professor and chair of the Department of Food Science, director of the graduate program in food science, and a major advisor to more than 60 doctoral and master’s degree recipients.
As executive director of the Nutraceutical Institute, he was responsible for a groundbreaking partnership between Rutgers and Saint Joseph’s University (PA). There is some work featuring Nutraceuticals below.
"Interest in Nutraceuticals began with a short course in
January 1990 entitled “Designer Foods” and evolved into a
third symposium in May 1994 entitled “Nutraceuticals,
Designer Foods III.” The Nutraceutical Institute was
founded in 1997." Dr. PAL
In 2002, Dr. Lachance and Dr. Nancy Childs (St. Joseph's College, PA) secured a $3.5 grant from the New Jersey Legislature for "Creating a Global Hub for the Nutraceutical Industry in Camden, NJ"
----------------------------------------------------------------------
"We have created a research relationship with the Cornell Institute
(human cell lines) and the Cooper Cancer Institute (human trials) of Cooper Health Systems in
Camden." Dr. PAL
----------------------------------------------------------------------------------------------------
Note: Dr. Lachance's work with colleagues in Guatemala (first document below) saved thousands of lives: "Fortification of tortillas in a Guatemalan village for 2.5 years demonstrated a 50 percent reduction in infant mortality and 30 percent decrease in morbidity. This occurred without changes in education, real income, or sanitation and without a significant increase in birth weight."
His work saving lives is noted on Dr. Lachance's plaque hanging in the St. Michael's College Academic Hall of Fame. Dr. Lachance earned the recognition in SMC's Hall of Fame's inaugural year (2002). Dr. Lachance earned a B.S. in science from St. Michael's in 1955 and an Honorary Degree from his alma mater in 1982.
--------------------------------------------------------------------------------------------
Dr. Lachance was a leading voice for "reinventing" the Food Pyramid well over a decade before it was finally adjusted...for which he did not receive credit.
